Ingredients for Peshawari Qatlama Recipe:

Make sure you have the following ingredients before you start preparing this traditional recipe.

  • 3 cups all-purpose flour
  • 1 cup yogurt
  • 1/4 cup ghee (clarified butter)
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • Warm water, as needed
  • Ghee for brushing

Instructions for Peshawari Qatlama:

Step 1:

In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar. Add yoghurt and ghee to the dry ingredients and start kneading. After that, gradually incorporate warm water to form a smooth and elastic dough. At the end, cover the dough and let it rest for at least 1 hour to allow it to rise.

Step 2:

Divide the rested dough into equal-sized portions. Take one portion and roll it into a thin, flat circle on a floured surface. Then, brush the surface with ghee and fold it into a semi-circle.

Step 3:

Brush the semi-circle with ghee again and fold it once more for creating layers. Keep repeating this process, stacking the folded dough to form a layered round.

Step 4:

Take the layered dough and gently roll it out into a round shape, ensuring the layers remain intact.

Step 5:

Heat a griddle or a flat pan over medium heat. In the next step, carefully transfer the rolled-out Qatlama onto the hot surface. Make sure to cook on both sides until golden brown, brushing with ghee for added flavour and crispiness.

Step 6:

Serve the Peshawari Qatlama hot, either on its own or paired with your favourite curry or yoghurt.
