  •  1 cup Yogurt
  •  6 cups Water
  •  5 Green Cardamom pods
  •  2 Bay Leaves
  •  2 Cloves
  •  3 Brown Cardamom pods

  •  1 tsp Ginger Powder
  • 3 tsp Fennel Powder
  •  2 tsp Dried Mint
  •  1 tsp Asafoetida
  • To taste: Salt
  • 1 kg Boneless Lamb Meat (from the leg)
  • 1 cup Lamb Fat
  • 1 cup Mustard Oil
  • 2 cups Milk

How to make Kashmiri Gushtaba Recipe:

Step 1:

The first step demands laborious work with the meat. Get a smooth stone and a wooden mallet. Pound the boneless mutton on it, add the fat meat, and pound it until it’s well done. After that, add ginger powder, salt, and brown cardamom powder. Keep beating on it until you get an excellent pulp out of it. 

Step 2:

Now make round balls of diameter 2-3 inches and put them at a distance on a tray. It’s essential to keep them separated so they don’t get merged. 

Step 3:

Get a broad cooking pan, heat the mustard oil, and add a pinch of salt and asafoetida. Beat the yogurt in a jug and introduce it to the warmed oil. Continuously stir it so it mixes well. 

Step 4:

Add water, the remaining whole spices, powdered spices, and the Milk in the mixture. Now, wait until the gravy gets boiled. 

Step 5:

Put meatballs that you made earlier in the gravy. However, please don’t put them all in once. Put them one by one with care. 

Step 6:

Let the meat adequately cook for an hour and simmer it for about 15 minutes.
