  • 1 and 3/4 cup and 2 and 1/2 teaspoon water

  • 1 and 1/2 tablespoon coriander powder
  • 4 red chilli
  • 1 and 1/4 teaspoon peppercorns
  • 1 and 1/2 teaspoon cumin seeds
  • 1/2 cup and 1 and 1/2 tablespoon ghee
  • 2 and 1/2 sprigs coriander leaves ( For Garnishing)

How to make Mutton Rogan Josh:

Step 1:

Quickly fry all the spices and start preparing the saffron milk. It’s super-easy to do: soak the saffron into the milk. Afterwards, place a pressure cooker on the heat and warm ghee within it. Once the ghee is hot enough, combine all the spices and fry for a few seconds. Make sure to keep stirring so it doesn’t get burned.

Step 2:

Now, you have to cook the mutton with other spices. First, fry the whole red chillies, cumin seeds, and asafoetida for a few seconds. Now, add mutton pieces and stir them well. Close the lid but not entirely and let the meat cook for 5-6 minutes on medium to high flame.

You are doing great so far! Remove the lid after 5 minutes and add 1/2 cup of water. Don’t stop stirring the pot; continuous stirring will allow all the flavours to get completely soaked in the meat. Once done, lower the flame and let the food cook for 10-15 minutes.
