  • 1 teaspoon rose water
  • A pinch of saffron strands
  • 1 tablespoon cornflour (optional, for thickening)

Instructions for Making Gujranwala Rabri Recipe:

Step 1:

Pour the full-fat milk into a heavy-bottomed pan. After that, bring it to a boil over medium heat.

Step 2:

Once the milk comes to boiling temperature, do reduce the heat and let it simmer. Afterwards, stirring occasionally to prevent it from sticking to the bottom of the pan. Continue the simmering process until the milk reduces to about half its original quantity. This process can take an hour or more, so be patient. Keep an eye on the milk to prevent from boiling over.

Step 3:

As the milk reduces, a layer of cream will form on top. Gently push this cream layer to the sides of the pan using a spatula. This cream will add richness and flavor to the rabri.

Step 4:

Once the milk has reduced to the desired consistency and has a creamy texture, add the sugar, cardamom powder, saffron strands, and chopped nuts. Mix well and continue to cook for another 5-10 minutes, allowing the flavors to mix together.

Step 5:

If you prefer a thicker rabri, you can mix the cornflour with a bit of water to form a smooth paste and then add it to the rabri. Cook for a few more minutes to thicken the rabri.

Step 6:

Remove the pan from the heat and stir in the rose water for a delightful fragrance.

Step 7:

Let the rabri cool to room temperature, then refrigerate it for a few hours before serving.
