Peshawari Kheer

Ingredients for Peshawari Kheer Recipe:

  • 1 cup Basmati rice
  • 4 cups whole milk
  • 1 cup condensed milk
  • 1/2 cup sugar (adjust according to taste)
  • 1/2 cup khoya (reduced milk solids)
  • 1/2 cup chopped almonds
  • 1/2 cup chopped pistachios
  • 1/4 cup raisins
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • Ghee (clarified butter) for frying nuts

Instructions for Peshawari Recipe:

Step 1:

  Wash Basmati rice thoroughly and soak it in water for about 30 minutes.

Step 2:

  In a large saucepan, bring soaked rice and 2 cups of water to a boil. Reduce heat to low, cover, and simmer until rice is cooked and water is absorbed.

Step 3:

 In a separate pot, heat whole milk until it starts to boil. Add condensed milk, sugar, khoya, and cardamom powder to the milk. Stir well until the mixture thickens.

Step 4:

Add cooked rice to the milk mixture, stirring continuously to avoid lumps.

Step 5:

 In a small pan, heat ghee and fry chopped almonds, pistachios, and raisins until golden brown.

Step 6:

Add fried nuts to the rice and milk mixture. If using saffron, dissolve it in a tablespoon of warm milk and add it to the kheer for a rich color and aroma.

Step 7:

Allow the kheer to simmer on low heat for an additional 15-20 minutes, stirring occasionally. Once the kheer reaches the desired consistency, remove it from heat. Let it cool before serving or refrigerate for a few hours for a chilled treat.

Step 8:

Garnish Peshawari Kheer with additional chopped nuts and a sprinkle of cardamom powder before serving.
