Peshawari Sabzi Recipe:

Ingredients for making Peshawari Sabzi:

For the Sabzi:

  •  2 cups cauliflower florets
  •  1 cup carrots, julienned
  •  1 cup green beans, chopped
  •  1 cup peas
  •  2 medium-sized potatoes, diced
  •  1 large onion, finely chopped
  •  2 tomatoes, chopped
  •  3 green chilies, finely chopped
  •  1 tablespoon ginger-garlic paste
  •  1/2 cup cooking oil
  •  1 teaspoon cumin seeds
  •  1 teaspoon coriander powder
  •  1/2 teaspoon turmeric powder
  •  1 teaspoon red chili powder
  •  Salt to taste
  •  Fresh coriander leaves for garnish

For the Tadka (also called as Tempering):

  • 2 tablespoons ghee (clarified butter)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  •  1/2 teaspoon fenugreek seeds
  •  A pinch of asafoetida (hing)

Steps for making Peshawari Sabzi:

Step 1:

 Wash and chop all the vegetables as mentioned in the ingredients.

Step 2:

 Heat oil in a pan. Add cumin seeds and let them spit. Add chopped onions and sauté until golden brown. Stir in ginger-garlic paste and green chilies. Cook until the raw aroma disappears. Add chopped tomatoes and cook until they turn soft and oil starts separating.

Step 3:

 Combine coriander, turmeric, red chili, and salt. Mix well. Then, add cauliflower, carrots, green beans, peas, and potatoes to the spice mix. Mix thoroughly. Make sure you cover the pan and let the vegetables cook on low heat until they are tender but not mushy.

Step 4:

 Now, In a separate small pan, heat the ghee. Add cumin seeds, mustard seeds, fenugreek seeds, and asafoetida. Let them splutter.

Step 5:

 Pour the prepared tadka over the cooked vegetables. Mix gently. And that’s all! Your Peshawari Recipe is ready!

Step 6:

 Garnish the Peshawari Sabzi with fresh coriander leaves. Then, serve it hot with naan or steamed rice.
